Our Head Chef, Martin Baker, is passionate about developing menus that use fresh, locally sourced ingredients. He works closely with local suppliers and going forward, Martin is working effortlessly with the garden team to try and produce up to 40% fresh fruits & vegetables from our gardens.
Martin is from the old school of cooking. Having first been trained at Accrington and Rossendale College for 2 years, he was then classically trained by Masterchef’s Stuart Cameron of Turnberry Golf Resort and by Ian Brady at the Royal County in Durham. Martin has also cooked under Marco Pierre White & Harveys and Gordon Ramsey & Hospital Road.
More locally, Martin and his team have achieved many accolades, with Cadbury House, Tracy Park, Stone Easton Park and Beechfield House all gaining 2 Rosettes for outstanding creative cooking, along with gold awards from South West Tourism and various other magazine reviews.
Martin takes great pleasure in training the Chef of tomorrow. When time allows, teaches and provides demonstration classes at Weston College. Martin also judges competitions including the Lion’s Young Chef of the Year.
If you wish to speak with Martin or ask any valuable cooking tips, he will happily oblige and pop out for a chat if there is time. Martin wishes all of his diners Bon Apetite!
We know that fine food starts with fine ingredients, and we aim to offer the best of locally-sourced produce on our menus. Our menus are ever-changing, but always offer plenty to delight you.
We aim to home-produce as much as possible – for the best quality, and to reduce “food miles”. Our delicious cakes, traditional scones, breads, soups, sauces and accompaniments are produced in our own kitchen.
We offer vegetarian options of course, and it is our pleasure to cater for any special dietary requirements – just let us know, and we will tailor our dishes accordingly.
We have a carefully-chosen wine list to complement your meal. Our list includes fine wines from around the world, as well as some more local ones.
Breakfast at Rookery is always well received, with our continental breakfast buffet and a comprehensive selection of hot breakfast dishes cooked to order (including the “Full English” of course) to start your day in the best possible way.
